This week, we return to Cognac to review something entirely new – a 17-year-old Fins Bois Cognac that Godet hasn’t released yet: the Godet Single Cask Spring 2025 Edition. Back in December 2024, we sampled a Godet 43-year-old single cask Cognac (their Fall 2024 edition) as part of our Cognac-Expert Advent Calendar, and we thoroughly enjoyed it. Now, we’re excited to explore a younger offering from this esteemed Cognac house with their Godet Single Cask Spring 2025 Edition.
Godet Single Cask Spring 2025 Edition Review
The Godet Single Cask Spring 2025 Edition originates from the village of Saint Amant de Nouère, which lies less than 20 km from Angoulême in the Charente department. Godet distilled this Cognac from Montils and Folle Blanche grapes and will bottle it at the end of April, after a preorder period on Cognac-Expert that ends on the 22nd of April. Godet aged it for 17 years in cask FB3202 and will bottle it at 44.4% ABV, without adding any colouring or using chill filtration. A bottle will retail for €101.

Nose:
Neat: Immediately, intense rhum agricole notes emerge, accompanied by fresh and juicy oranges, exotic woods, and a hint of cigar box. Fresh coconut and orange blossom water follow, leading to a rich, rum-soaked gâteau Nantais* aroma with subtle vanilla undertones.
Palate:
Neat: The wood influence is noticeable but not overpowering. Tangy oranges and clementines are complemented by faint hints of passion fruit. Oak spices, sandalwood, and cedar add depth, while roasted hazelnuts and toasted notes provide warmth. Clove and coconut shavings, along with a touch of astringent oak tannins, round out the palate. The mouthfeel is lightly creamy; Godet did well not to reduce this Cognac further.
Finish:
Long and lingering, with a persistent tanginess and spiciness. Sharp notes remain, accompanied by whiffs of cigars, their box, and a slight smokiness that turns slightly ashy on the tongue.
Comments:
This young Cognac is absolutely delicious, proving that exceptional quality doesn’t require 30 years or more of ageing. Although likely reduced, Godet has done so skilfully, preserving both the intense nose and rich palate packed with aromas and flavours. The cask’s influence is evident yet balanced, adding depth without overwhelming the senses. Godet is certainly a Cognac house to remember and follow, though my credit card might need to be hidden, despite this single cask’s reasonable pricing.
